The author discusses a general procedure to obtain constitutive relations for fluids that satisfy the principle of material objectivity and a local version of the second law of thermodynamics. The choice of two potentials and a particular objective time derivative is sufficient to derive a complete set of constitutive equations. The main aspects of the theory are illustrated through examples concerning two large families of fluids: anelastic viscous fluids and viscoelastic fluids.
