The paper discusses construction principles allowing the design of billiard systems which are hyperbolic. Special attention is given to billiards with convex pieces in the boundary, and also to `soft' billiards. Several examples, for which hyperbolicity had been established previously in the literature, are shown to be covered by the general framework.
