This review describes some of the fundamentals of solidification, which combines aspects of interfacial fluid dynamics and of convection. The focus is on the situation when the solid-liquid interface can become so convoluted as to form a porous medium in which continued heat and mass transfer, fluid flow and phase change can occur.
