The authors continue their study of entropy production [see \textit{C. Maes}, J. Stat. Phys. 95, No. 1/2, 367-392 (1999; Zbl 0941.60099) and \textit{C. Maes} and \textit{F. Redig}, ibid. 101, No. 1/2, 3-15 (2000; Zbl 0972.82049)]. From their point of view it measures the deviation of microscopic time reversibility. In this paper they provide a mathematical introduction to the concept of entropy production. They derive the expression for the mean entropy production for continuous time Markov chains and extend it to a general class of interacting particle systems. It coincides with the physical entropy production in cases where it has a physical meaning.
