The purpose of this paper is to study the second variation of the volume and the stability of minimal submanifolds in Finsler geometry. As application, the authors consider the stability of minimal immersions into Minkowski spaces. A Bernstein type theorem is obtained. An example of an unstable minimal surface in \((\alpha , \beta )\)-Minkowski spaces is derived.
